Healthy Turkey Chili

Ingredients
1 tablespoon olive oil
1 medium onion, diced
1 green bell pepper, diced
1 jalepeno, chopped and seeds removed
2 cloves garlic, minced
1 lb lean ground turkey
1 (15 oz) can black beans, drained and rinsed
1 (15 oz) can kidney beans, drained and rinsed
1 (15 oz) can diced tomatoes (with juices)
1 (8 oz) can tomato sauce
2 cups chicken broth (or water, as needed)
2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon smoked paprika
½ teaspoon dried oregano
Salt and pepper to taste
Optional toppings: chopped cilantro, shredded cheese, avocado, sour cream, and Fritos
Instructions
Sauté the veggies: Heat olive oil in a large pot over medium heat. Add the diced onion and bell pepper. Cook until softened, about 5 minutes. Add garlic and cook for 1 more minute. Then, add in the jalapeño.
Cook the turkey: Add the ground turkey to the pot. Cook, breaking it up with a spoon, until browned and no longer pink, about 5–7 minutes. Season with salt and pepper.
Add the spices and tomatoes:Stir in chili powder, cumin, smoked paprika, and oregano. Add the diced tomatoes, tomato sauce, beans, and chicken broth. Mix well to combine.
Simmer: Bring the chili to a simmer. Reduce heat to low, cover, and let it simmer for 20–25 minutes, stirring occasionally. Add more broth if needed for desired consistency.
Taste and serve: Taste and adjust seasoning if needed. Serve hot with your favorite toppings.
