One Pan Chicken Sausage with Sweet Potatoes and Maple Lemon Glaze



Serving Size: 2-3 People


Ingredients:

  • 4 Chicken Sausage links (I used Aidell’s Italian Chicken Sausage)

  • 1 sweet potato, chopped into very small 1” pieces

  • 1/2 lb broccoli, chopped

  • 1/2 red onion, chopped into squares

  • 1 tablespoon olive oil

  • Maple Lemon Glaze: 1 tablespoon olive oil, 1/2 lemon juiced, 2 tablespoons maple syrup, 3 cloves garlic minced, salt, pepper, red pepper flakes

  • Optional topping: Parmesan


Recipe:

  1. Heat a pan on medium heat and add 1 tablespoon olive oil. Chop your sweet potatoes into very small 1” pieces. Once the pan is hot, add your sweet potatoes to the pan, stir them around to coat them all in olive oil, and let cook (covered) for 7 minutes.

  2. While these are cooking, chop your chicken sausages into coins. Chop your broccoli and red onion. Add all of these onto the pan (uncovered) after your sweet potatoes have cooked for 7 minutes.

  3. Start on your Lemon Maple Glaze by adding 1 tablespoon olive oil, 1/2 lemon juiced, 2 tablespoons maple syrup, 3 cloves garlic minced, salt, pepper, red pepper flakes to a small bowl and mixing. Add this mixture on top of your food and let cook for 8 more minutes.

  4. Once done, turn off the heat, serve and enjoy! Optional: top with Parmesan
