Tomato Basil Orzo

Ingredients: (Serves 2-3)

¼ yellow onion, finely chopped

1 cup dry orzo

¼ tomato, diced

2 garlic cloves, minced

1 tbsp tomato paste

⅛ cup cooked veggie broth (from the pot you cooked the orzo in)

1 tbsp butter

1 tbsp fresh oregano

¼ cup fresh basil

3 cups vegetable broth, for cooking the orzo

¼ cup grated parmesan

Salt and pepper to taste


Instructions:

  1. Begin by heating up a pan on the stove on medium heat. Add olive oil to the pan.

  2. While this is heating, chop your onion, tomatoes, garlic, and oregano. Once the pan is heated, add on your onions and garlic and let cook for 4 mins. After this, add on your tomatoes and tomato paste. Cook for ~8 mins and then put the heat on simmer.

  3. Boil your vegetable broth in a pot. Once boiling, add in your orzo.

  4. Once the orzo is cooked, strain the broth from it and add the cooked orzo onto your pan with the vegetables. Add in the oregano, basil, 1/8 cup cooked veggie broth, salt, pepper, and butter. Mix together.

  5. Add to your plate and top with parmesan and a little drizzle of olive oil. Enjoy!
